Tabbouleh is a salad of Lebanese origin consisting chiefly of cracked wheat, tomatoes, parsley, mint, onions, lemon juice, and olive oil. Today here I give u much more healthier version of this recipe with a high fibre & protein rich grains called Quinoa.
1/2 cup chopped red bell peppers
1/2 cup chopped yellow bell peppers
1/2 cup chopped zucchini
1/2 cup chopped tomatoes
1/2 cup chopped onions
2 tbsp chopped coriander leaves
1 cup cooked quinoa
1 lime juice
Salt & pepper to taste
Combine all the ingredients together in a bowl.
Serve this salad cold with hot mushroom tarts.
