Rice & spinach balls
Popeye was definitely on to something. Spinach is a super food loaded with tons of nutrients in a low calorie package.
Dark leafy greens like spinach are important for skin and hair, bone health, and provide protein, iron, vitamins and minerals.
The possible health benefits of consuming spinach include improving blood glucose control in diabetics, lowering the risk of cancer, lowering blood pressure , improving bone health, lowering the risk of developing asthma and more.
My little one is a picky eater & usually all kids are when it comes to eating green leafy vegetables. So, here I come up with a healthy & tasty solution for kids snack or a party starter or just to use ur leftover rice.
Rice and Spinach balls
1 cup cooked or leftover rice
1/2 cup cooked spinach
1/2 cup grated cheddar cheese
2 tbsp finely chopped onion
Chopped green chillies (optional)
1 cup bread crumbs
1/2 cup bread crumbs
Oil for frying
Mix everything in a deep bowl except 1/2 cup of bread crumbs aside in a different bowl.
Make a sticky dough of rice mixture & make small balls. Roll the balls in bread crumbs & deep fry till golden brown.
Serve hot with garlicky dip or marinara sauce or just simply with some tomato ketchup as a dip.
