Here comes my Orange & Semolina no bake tart cake!!
It’s my mums birthday today and I thought to assemble all her favourite ingredients.. starting with digestive biscuits as a base, sooji halva with oranges and topped with almonds and pistachios… super excited to show this cake to my mum.. how I wish she could eat this today but she’s too far from me in India 🙈

5-6 digestive biscuits
1 cup sooji
1 cup Sugar
1 tbsp butter
1/2 cup chocolate
1 cup cream
Crush 5-6 digestive biscuits n make a crumble with melted butter.
Place it as a base in a cake mould.
Roast the sooji without oil or butter.
Blanch the oranges for almost 2 hours. Peel n blend them. Take skin of only 1 orange.
Heat orange pulp with Sugar. As the sugar melts, add roasted sooji n butter. Make it like shiro (halva).
Place the mixture on biscuit crumble with the help of a spatula.
Refrigerate it for 1 hour.
Add chocolate ganache on it n decorate it with crushed dry fruits.
