Chick Pea & Mushroom Curry
1 cup chick peas soaked overnight
1 onion diced
1 large tomato puréed
1 tbsp coriander leaves
1 packet button mushrooms finely sliced
200 ml coconut milk
2 tsp cumin seeds
2 tsp red chilli powder
1 tbsp ready chhole powder
2 bay leaves
1 star anise
2 tbsp oil
Salt to taste
Boil the chick peas with salt, cloves, bay leaves & star anise.
In a mixture, first grind the cumin till it’s powdered. Then add onion to it and give a rough chop. Lastly add coriander leaves to it & make a paste.
Heat oil in a non stick deep pan & add onion purée. Cook till its dry. Then add tomato purée with some salt, red chilli powder & chhole powder. Cook till all gets blend into a paste.
Add sliced mushrooms to this paste & Cook till the water evaporates. Later add boiled chick peas with some water but remove the whole spices from this. Cook for 10 minutes & add coconut milk until it gets thicker & gives a smooth texture.
Serve hot with paratha or jeera rice.
